Cornbread muffins and smoked Gouda

This morning I found another winner in The Best Recipe - Northern cornbread. I had to make some substitutions. I had no butter, so I used 2 tblspoons olive oil instead. I had no buttermilk, so I replaced it with milk. It worked! It was especially tasty with the smoked Gouda from yesterday.
